Ginger Molasses Cookies

 

Ginger Molasses Cookies are definitely in my top 3 favorite holiday cookies.  I love the warmth of the cinnamon spice, the crackly tops and the chewy texture.  Utterly delicious!   My favorite recipe comes from Mandy at Baking With Blondie.  

Here's the part where I diverge from my normal baking protocol.  To ensure I get a great chewy texture on my cookies I tweaked Mandy's recipe slightly by replacing the butter with butter-flavored Crisco shortening.  What?!  Shortening instead of butter? Yes way!  Now, before you cast dispersions on me, hear me out.  I find that using shortening reduces the likelihood of these cookies spreading too much during the baking process.   Nothing worse in my opinion than a super flat ginger molasses cookie.

Normally I roll the dough balls in turbinado sugar before baking, but this year I left some without the sugar coating because I wanted to dip them in melted white chocolate.  I was a bit worried that the addition of white chocolate would render the cookies too sweet, but I'm happy to report I was wrong.  I only dip a small portion of the cookie in the chocolate so it's not overwhelming.  Plus, nothing beats the appeal and aesthetic of the green and red holiday sprinkles.

Icebox Oreo Cheesecake


I'm such a huge fan of Instagram.  Ever since I signed up for my account I check it daily, most times hourly!, for ideas and inspiration.   That's where I saw this Icebox Oreo Cheesecake from meringuedesigns, using a Cook's Country recipe.  The cookies and cream cake looked so good I had to make it for myself.   Another big plus was that it required absolutely no baking, not even for the crust, which is ideal for summer.  Love that!


 

I've made a few no-bake cheesecakes on this blog before but they all used gelatin to get their firmness.  This recipe uses a homemade pudding and white chocolate to mimic the velvety texture of a baked cheesecake.    It really couldn't have been easier to make so I highly recommend you give it a try.

Raspberry-White Chocolate Bombe


I've been wanting to make this Raspbery-White Chocolate Bombe for a while now but was waiting for the right occasion.  Mother's Day fit the bill perfectly.  I can't think of any mother - or grandmother, aunt, sister or daughter for that matter - who wouldn't love to receive a beautiful cake like this. 


"Pretty in pink" is the first thing that comes to mind when I see this cake.  The pink and white colors just make me smile.  This showstopper is yearning to be the center of attention at your next  celebration, e.g., bridal shower, baby shower, christening or birthday to name a few. 


Underneath a blanket of white chocolate curls lies fruit-studded raspberry mousse and moist, tender white cake.   Now I admit that I'm not much of a fan of white chocolate; it's just too sweet for my taste.  If you feel the same follow my lead and eat around it; the cake and filling are delicious!

FYI: The cake stand is a 2012 limited edition from Martha Stewart Collection that I bought at Macys.  I added the ribbon embellishment.  The chocolate curls were purchased at my local cake decorating store,  Sugar 'N Spice.
