No-Bake Lime Cheesecake

When the temperature rises even I, as an avid baker, hesitate to turn on the oven.   Call me crazy, but when I was a kid growing up in the sweltering summers of California's San Joaquin Valley I used to bake all the time.  But mind you, I was wearing my bathing suit at the time - it was the only way I could tolerate the crazy hot weather.  These days you definitely won't catch me wearing that particular attire!

So when I was browsing the July/Aug 2017 issue of Martha Stewart Living the recipe for a No-Bake Key Lime Cheesecake immediately jumped out at me.   Even better, I had all the ingredients in my kitchen.  [Note: I used regular organic limes, not key limes.]  Graham cracker crusts are de rigueur for cheesecakes, but the twist with this recipe was it didn't require baking.  Instead you just pop it in the freezer for 15 minutes.  Genius!

The filling is super light, creamy and jam packed with lime flavor.  If you love citrus this cheesecake is right up your alley.  It's the perfect dessert for your next BBQ, but honestly I'd indulge in it for any occasion.

Lemon-Ginger Icebox Cake & a Giveaway

When BelGioioso asked me if I wanted to create a recipe for a traditional dessert "with a twist" using their mascarpone cheese I was more than happy to accept the challenge.   The first thing that came to mind was an icebox cake made with lemon and ginger.  This dessert is not only easy to assemble but also really light and refreshing.  I highly recommend you give it a try.  You can find the recipe on culture's website.

As an added bonus BelGioioso was generous enough to host a giveaway to my blog readers.   One lucky person will win a gift package with an assortment of their cheeses.  I speak from experience when I say they all taste delicious!

Here are the giveaway rules:

1) Only open to residents with a mailing address in the continental US (i.e., no Alaska or Hawaii addresses.)

2) Leave a comment to this blog post.  You must include your email address in the comment in order to be entered.   Sorry, but that's the only way I'll be able to contact the winner.

3) Only one entry per email address.

4) Giveaway ends on Thursday December 11 at 11:59PM PST.  Winner will be selected from all eligible entries on Friday December 12.

UPDATE: The randomly selected winner from the eligible entries was Comment #1.  I'll be emailing you directly for your information.  Thanks again everyone for participating!

Icebox Oreo Cheesecake

I'm such a huge fan of Instagram.  Ever since I signed up for my account I check it daily, most times hourly!, for ideas and inspiration.   That's where I saw this Icebox Oreo Cheesecake from meringuedesigns, using a Cook's Country recipe.  The cookies and cream cake looked so good I had to make it for myself.   Another big plus was that it required absolutely no baking, not even for the crust, which is ideal for summer.  Love that!

I've made a few no-bake cheesecakes on this blog before but they all used gelatin to get their firmness.  This recipe uses a homemade pudding and white chocolate to mimic the velvety texture of a baked cheesecake.    It really couldn't have been easier to make so I highly recommend you give it a try.

No-Bake Chocolate Peanut Butter Squares

Ever since my kitchen was out of commission for a few months last year I've been particularly interested in easy, no-bake recipes.  If the "big one" ever hits and I can't use my oven at least I can make these delicious treats.   Can you tell where my priorities lie...lol?

I asked a co-worker for some baking recommendations and they had fond memories of these No-Bake Chocolate Peanut Butter Squares.  Chocolate - Peanut Butter - no-bake AND I've never made them before?  Ding, ding, ding...I sense a winner!  If you're like me and love the combo of chocolate and peanut butter these squares are right up your alley.

Chocolate Eclair Cake

I live in constant fear that my gas oven will die on me.  It's happened before and for a baking fanatic like me it was my worst nightmare realized.  If you saw my oven for yourself you'd sympathize.  So can you blame me for always being on the lookout for no-bake desserts?

My sister sent me this recipe for a chocolate eclair cake from Cook's Country a while back.   I'd never heard of it before but apparently it was quite well-known.   The no-fuss version is to layer a mixture of instant vanilla pudding and Cool-Whip between graham crackers, top the whole thing with ready-made chocolate frosting and refrigerate for a few hours.  Cook's Country amped it up big time by making everything, but the graham crackers, from scratch.

The flavors of the cake were great but I wish the graham crackers had held up their shape more, especially when it came time to slice.  Not sure how the folks at Cook's Country were able to get such nice, clean cuts because my crackers were kind of mushy.  Maybe next time I won't let the cake chill overnight; perhaps a few hours will suffice.

2011 Holiday Treats

A quick post to show the fruits of my labor this holiday season.  Just a pic of some of the treats I made, and gifted, to friends and family.  Some are old favorites and some are making their debut to the party:

Macarons (the ones above are raspberry and pistachio)
Walnut Snowballs

No-Bake Rocky Road Bars

My favorite ice-cream flavor of all time is Thrifty's Coconut Pineapple.   A close second is rocky road, but the kind with almonds, no walnuts please.

I was on the lookout for new recipes to try for this year's holiday treats and I saw this one for no-bake rocky road bars from America's Test Kitchen.  After endless hours spent baking cookies it was a nice change not to use the oven.

These bars are really, really good - sort of like a pumped up version of fudge, only better.  While the inclusion of graham crackers isn't necessarily authentic to rocky road I find it added a nice texture to the candy.

French Silk Chocolate Pie

This French Silk Chocolate Pie was recently featured on an episode of Cook's Country TV.   There was something so nostalgic and retro about it that, despite my apprehension about pies, I had to make it.

In the world of baking my Achilles' heel always seems to be pies.   You know why?  The darn crust!  I could never get it right, until now!  Cook's Illustrated has a foolproof pie crust that really does live up to its name...seriously it should be called idiot-proof.  And the funny part is that it includes vodka in the recipe, yes, vodka...genius!

I'm not sure where the "French" comes in to play, but perhaps it's describing the texture.  The chocolate filling is so silky smooth, light and delicious...any chocoholic will fall in love with it.   And don't get me started on the crust!

Icebox Cheesecake

I had the pleasure of tasting a really delicious homemade cheesecake a few weeks ago that was unlike any I'd had before.  This wasn't your typical New York style, i.e., super dense and heavy.  Instead it was light as a feather with the perfect balance of cream cheese and subtle sweetness.  Topped with fresh berries it was too tempting for me to resist.  Ok...I admit I helped myself to more than a few slices!

Weeks passed and I still kept thinking about that cheesecake - surely a telltale sign that I had to make it.  Armed with the only clues I had, that it contained cream cheese, cream and gelatin, I began my research online.

Luckily I found this no-bake cheesecake recipe from Cook's Country TV, sister show of America's Test Kitchen.  The best thing about this version is that you only bake the graham cracker crust, not the filling.  No pesky water baths and cracked tops to deal with....right up my alley!  After tasting the finished product I'd say I think I came pretty darn close to the original.

If you're craving a cheesecake that won't set you back a few heart attacks I definitely recommend this one.
