Valentine's Sprinkles Cookies

 

Another addition to my Valentine's Day cookie box are these Valentine's Sprinkles Cookies.  The recipe comes by way of Dan Pelosi.  The inner child in all of us will absolutely adore these.  I love how easily adaptable the cookies are to celebrate any holiday by simply changing the sprinkles colors, e.g., pastel for Easter, red/white/blue for the 4th of July, etc.

Dong Phuong King Cake

As a self-proclaimed foodie it's a bit ironic that I never had a desire to visit New Orleans, home of gumbo, jambalaya and po' boys, until I heard about Dong Phuong King Cakes.  Dong Phuong is a renowned Vietnamese bakery in New Orleans East whose king cake is considered by many to be the best in The Big Easy and even nationwide.  I can't remember where I first heard about it but I had to try their take on the traditional celebratory cake that's made and sold only between Epiphany and Mardi Gras.   
 
 

My introduction to king cakes was as a student in France where it's known as galette des rois and made with puff pastry and frangipane filling.  Its Louisiana cousin, however, is more like a large iced cinnamon roll  decorated with purple, green and gold colored sugars, the colors of Carnival and Mardi Gras.  What differentiates Dong Phuong's cake from all the others is the brioche-like bread which bakes up lighter and flakier and topped with cream cheese frosting.
 
 
Since winning the prestigious James Beard award in 2018 the popularity of Dong Phuong's King Cakes has skyrocketed.  The bakery only produces the cakes during Carnival season and in limited supply, which makes it quite difficult to get your hands on them.  There's definitely a time investment involved to procure one.  I tried to order a cake online, via Goldbelly, but  unfortunately all the pre-orders were sold out within weeks of going live.  Not to be deterred , and more determined than ever, with plane ticket in hand I headed to MSY.
 
 
 
Here's how I was able to get my hands on the elusive Dong Phuong King Cake....  
 
Without a pre-order there are basically two ways to get a cake: 1) purchase from an authorized retailer or 2) join the walk-in queue at the bakery itself.  Luckily I had success with both options.  The place I was staying at in New Orleans was close to one of their retailers.  I had called the shop in advance and learned their process for buying a cake.  [Note: Each retailer has their own process.] This particular shop passed out cards to fifteen customers each morning, first come first serve, which gave the card holder the right to return in the afternoon to purchase up to two king cakes each.  That's how I was able to buy my first Dong Phuong King Cake - the original cinnamon flavor. 

 
My strategy was to buy and taste one cake first to see if it lived up to the hype and decide if it was worth the drive to the bakery. One bite and the decision was self-evident...it lived up to all the hype and there was no doubt that I would joining the queue the next day so that I could buy some other king cake flavors. The bread was flaky and light and the cream cheese frosting was incredibly fluffy and not too sweet.  Heaven in a bite. 
 
 
I drove to Dong Phuong Bakery the next day (it was a Thursday) arriving half an hour before the 8am opening, where about twenty people were ahead of me in the queue. I highly recommend going on a weekday, ideally Wednesday or Thursday, as several people in the queue told me that lines and wait times were much longer on Fridays and the weekend.   When it was my turn to purchase I chose  three of the filled king cakes: strawberry, coconut and pecan.  The bakery also sells cream cheese filled and almond creme filled.  While all the cakes were delicious my favorite was the original cinnamon, followed closely by the strawberry and then the coconut.  I found the pecan one's filling was a bit too sweet for my taste.     
 
You're probably wondering, "Was it worth the cross-country trek for the Dong Phuong King Cake?" My reply: sans doute...without a doubt! I don't see myself returning to New Orleans any time soon but come Dec/Jan when online ordering is available I already know which flavor(s) of Dong Phuong King Cake I will buy.

Dolly Parton's Coconut Cake

Maybe you're familiar with the expression, "What Would Dolly Do?" Well, I think I know.  Dolly would bake!  When I initially heard that Dolly had partnered with Duncan Hines to create a limited edition baking collection I was definitely intrigued.  Dolly is apparently an excellent cook and baker so it seemed a foregone conclusion that her products would be delicious.  

 
 
The challenge was actually finding them in stock.  Due to its immense popularity the mixes were sold out everywhere.  Serendipitously I found the coconut cake mix at a Walmart store in my hometown and immediately snapped up a box.  The coconut cake was the one I really wanted to try so I was very happy that the store had this flavor. 
   

 
Instead of the usual vegetable oil and water that most cake mixes call for, Dolly's cake used milk and butter.  Right off the bat I knew this was going to be rich and decadent cake.  Never a bad thing in my book.  I chose not to use Dolly's buttercream because I find most prepared frostings to be sickly sweet.   Rather, I opted to make cream cheese ermine frosting, which is lightly sweet with a texture similar to a European meringue buttercream.
 
 
Frosting the cake was easy breezy since the sides were covered with sweetened coconut flakes; they hide a myriad of decorating sins.  One taste of Dolly's cake with the cream cheese frosting and I was in heaven.  The cake layers were soft and fluffy with just the right amount of coconut flavor to balance the tangy sweet frosting.  You can be sure I will be making this cake again!  And if I find the banana cake mix I will give that one a go too!

No-Bake Mango Lime Cheesecake

 

To kick off the summer season (and the opening of his backyard swimming pool) my brother hosted a Memorial Day weekend barbecue for the family.  We normally divide and conquer when it comes to the menu and I was tasked with bringing dessert, comme d'habitude.  I wanted to make something light and fruity that didn't require too much effort.  Enter this No-Bake Mango Lime Cheesecake, which I'd initially seen on the NY Times Cooking Instagram account and immediately saved.  

 

 
Cheesecake itself can be quite heavy, especially the New York variety, but thankfully this one isn't since there are no eggs in the recipe.  The mango flavor comes from the use of canned, unsweetened purĂ©e, an ingredient not normally found in my pantry, but I was able to easily source some from Amazon.  I've heard you can also find it at Indian supermarkets. The citrus tones coming from the fresh lime juice and lime zest compliments the mango and cream cheese flavors beautifully.
 

The original recipe calls for a no-bake graham cracker crust but I decided to swap that out for one that you bake since I prefer a toasty texture instead.  Gelatin is used to set up the filling and glaze which makes it really nice to slice.  Often times I've found that when you use mangoes in desserts the fruit flavor gets lost in the shuffle; not with this cheesecake.  Since it wasn't baked the refreshing, tropical fruit flavor stays intact.   Really delicious!

Pineapple Cream Cheese Danish Braid

 

Sometimes a craving strikes me and I have to make it as soon as possible.  That's what happened the other week when all I could think about was a Cream Cheese Pineapple Danish Braid.  I'm a total sucker for anything pineapple because it's my all-time favorite fruit. 
 

For the Danish dough I used a recipe that I've made before on this blog.  It's super simple and requires no electric appliance whatsoever, just your hands.  For the cream cheese and pineapple fillings I used these recipes.

The only caveat I would say when it comes to making any kind of laminated dough is to be prepared for quite a bit of non-activity.  There's a lot of down time involved because the dough needs to chill in between all the turns and also proof just before baking.  In total, the process to make this particular braid spanned three days.

Poinsettia Red Velvet Cake

 

I asked my friend Gracie what kind of cake she wanted me to make as XMAS gift and she immediately said red velvet, which I wasn't surprised by at all.  It’s her and her son's favorite!  Since this was for the holidays I made this Poinsettia Red Velvet Cake.  

For the cake layers I used my favorite recipe from Cook's Country that produces the most tender crumb.  For the frosting I chose Stella Park's cream cheese buttercream, which is super fluffy, delicious and a lot less sweet than the traditional frosting made with cups and cups of powdered sugar.    

To give the cake a festive feel I featured a large poinsettia as the main design.  I went online and watched a few videos on YouTube on how to pipe the flower using icing.  I know my poinsettia isn't the most botanically correct, but I think it will more than suffice, and I can live with that!

Gingerbread House Bundt Cake

 

November came and went by in a flash with very little baking on my end.  To be honest I just didn't have the motivation after returning from a holiday in Europe.  Perhaps subconsciously I was also storing my energy in preparation for the whirlwind of holiday baking and candy making that awaited me in December?
 
My first real bake for the holiday season is this super cute Gingerbread House Bundt Cake using this Nordic Ware pan.   For the cake itself I used White Lily Flour's recipe for a cream cheese pound cake.  I need another bundt pan like a fish needs a bicycle but I couldn't help myself.  The design on this pan was too cute to pass up and will be added to my growing bundt collection.  
 
 
What I especially love about a bundt cake is how easily you can achieve fantastic results with very little effort.  Especially ideal for you novice bakers out there.  Let the cake pan do all the work for you!  But, whenever making a bundt cake the golden rule you have to follow is to grease the pan well.  I swear by Baker's Joy cooking spray (with flour) and 99% of the time my cakes release without any issues.

Cream Tart

 

Often times people will ask me where I get baking inspiration from and my usual answer, "anywhere and everywhere," probably sounds a bit disappointing, but it's true!  I can't pinpoint anything in particular that inspires me.  Sometimes it's tasting an amazing pastry and wanting to replicate it at home or a friend texting me to to say they've seen a particular dessert and asking if I could make it.  
 
 

In the case of the Cream Tart, it was seeing an Instagram post that was the inspiration.  If you're on social media I'm sure you've seen these cakes before, normally shaped into numbers or letters.   Apparently cream tarts have been popular since 2018, but to be honest I never really paid much attention to them.  After seeing that Instagram post I did some research and discovered that cream cakes weren't so difficult to make. 
 
 
When deconstructed, the tart was comprised of shortbread and some type of filling, then decorated with fresh fruit, meringues, macarons, flowers* and anything else your heart desired.   Once all the components were compiled the actual cake assembly was quite simple.  But you would never think that when you look at the finished cake...so visually stunning and very Instagram worthy!  [*Make sure the flowers you use are safe to put on food! For the "S" cake I mistakenly put a few sprigs on baby's breath but DO NOT DO THIS!  Baby's breath are toxic when consumed. They were immediately removed after taking the photo.]
 
 
I could easily see these cakes being the star dessert for a birthday, baby shower, bridal shower or any kind of party.  Since so many of my friends have birthdays in September (including my own!) they just might be getting a cream tart to celebrate.

Basque Cheesecake

It all started with a text from my friend Bibsy.  "Have you ever made a basque cheesecake?"  In fact, I had never and by pure coincidence I had recently saved this post from Instagram which just happened to be a Basque Cheesecake. What really drew me in was the burnt top crust.  There was something about the dark amber color that looked so inviting and delicious. Bibsy's text was just the extra motivation I needed to make the cheesecake. 
 

The recipe couldn't be simpler to make and doesn't have many ingredients since there's no crust to contend with.  My first thought when taking a whiff of the baked cheesecake was that it smelled like crème brĂ»lĂ©e.  And there's absolutely nothing wrong with that.

Freeze-Dried Berry No-Bake Cheesecake

 
I love the idea of no-bake desserts especially when it's hot outside because the last thing I want to do is turn on an oven.  When I saw this post on Serious Eats for a no-bake cheesecake that used freeze-dried fruit I was definitely intrigued.  I've made an icebox cheesecake before but I liked this recipe from Stella Parks because it used the freeze-dried fruits to infuse a fruity flavor, but sans the additional moisture that fresh fruit would bring. 
 
 
Luckily I had a bag of freeze-dried raspberries from Trader Joe's sitting in my pantry along with the other cheesecake ingredients to make half the recipe.  The recipe scaled down easily to fit a 9x5" loaf pan.  Since I'm trying to limit the number of trips I make to the grocery store it's always a plus when I have everything on hand.   
 
 
I had a taste of the filling as I was making the cheesecake and the intense raspberry flavor from the freeze-dried fruit was incredible.  It was literally a berry explosion.  Is it strange that it reminded me of fruit-flavored Starburst candies?  As a self-professed lover of the color pink this cheesecake also appealed to me aesthetically.  I could easily picture this dessert gracing the table at a baby shower or birthday party.

Strawberries & Cream Chiffon Cake


This is the second time I've made this Strawberries & Cream Chiffon Cake.  Yes, it's that good. The first time was on the occasion of my friend A's birthday at the end of January.  When I asked him what treat he wanted I was expecting his usual favorite, tiramisu, but not this time!  Last year his wife had gotten him a cake similar to this one from a local bakery so I took that as a challenge to make it myself.  I was so happy with how it turned out that I had to make another one for this blog. 


The chiffon cake is the real star of this dessert and one of the best that I've ever tasted.  One bite and the first thing that came to mind were the cakes you find in Chinese bakeries here in San Francisco, i.e., not too sweet, but soft, light and fluffy.  I got the recipe from my baking guru Stella Parks on Serious Eats.  If you haven't already tried one of Stella's recipes I highly encourage you to.  They are as close to baking perfection as you can get.

I couldn't think of a better companion to the chiffon cake than whipped cream.  Now this isn't your typical whipped cream; this one is mixed with cream cheese which provides stability to the frosting as well as a beautiful tang.   Perfection!

Pineapple Cream Cheese Kolaches



Happy Black Friday!  I, for one, will be avoiding brick and mortar stores at all costs today.  Having worked more than a decade in the retail industry I remember the mayhem that could ensue with those door buster deals.  And don't even get me started on the parking drama. Thanks, but I'll pass!  I'm much rather stay at home and bake.  

Kolaches have been on my baking bucket list for quite some time now, but life seemed to get in the way and it fell by the wayside.   No better time than the present to give them a try.  I first became aware of these Czech pastries on an episode of Cook's Country.  Apparently they are quite popular in Texas and some Midwestern states.  Who would have known? 

What really intrigued me about the kolaches was the combination of a soft, buttery bread filled in the center with cream cheese or fruit.  Normally you see that combination in a laminated dough, like a Danish.  I decided to make my kolaches with cream cheese and fruit because two fillings are obviously better than one, right?   For the cream cheese filling I used a recipe I found for cheese Danish from the NY Times.  For the fruit filling I had to go with my all-time favorite, pineapple! 


The kolache dough was a dream to work with, i.e., really pliable and easy to shape.   Creating the round indentations in the center of the dough balls was a snap with a greased 1/3 cup measuring cup.  To fill the kolaches with limited mess I used pastry decorating bags but you can easily substitute with Ziploc bags.  A brush of egg wash and a generous sprinkle of streusel and the kolaches were ready for the oven.

The smells emanating from the oven while the kolaches baked were absolutely intoxicating and I couldn't wait to see how they turned out.  While they looked great I was really hoping that they tasted even better.  I'm very happy to report I wasn't disappointed!  The buttery bread was so soft and light and the duo of cream cheese and pineapple fillings was perfect.  No need to fly to Texas, I'll definitely be baking these kolaches again.

Raspberries & Cream Angel Food Cake



I debated whether or not to wait until February to post this Raspberries & Cream Angel Food Cake, you know for Valentine's Day and all, but then I figured why wait?   For those of you looking to make a dessert to celebrate the holiday this will give you a leg up and time to prepare.  The inspiration for this beautiful cake came from two baking masters: ZoĂ« Francois and Stella Parks


 
For the angel food cake I made Stella's recipe which uses a slow and steady approach to whipping  the fluffy meringue base.   I also love that her recipes uses egg whites straight from the fridge - no need to get them warmed to room temperature.   As for the pale pink raspberry cream frosting, I literally stopped in my tracks when I first caught sight of it on ZoĂ«'s Instagram feed.  I couldn't get over how visually stunning it looked.  Whenever I use whipped cream as a frosting I like to add in some cream cheese which gives it a delicious tang and much needed stability.  Cue the raspberry jam and you end up with the most beautiful and delicious frosting! 



As I write this blog post I am literally enjoying a big slice of the cake.  It's heaven, I tell you.  Whereas most angel food cakes tend to be cloyingly sweet this one is anything but!  I highly encourage you to give it a try.  Trust me, you won't regret it.

Lemon Gooey Butter Cookies


San Francisco has no shortage of excellent bakeries and I love sampling as many of them as possible.  Recently Jane The Bakery was awarded the 2018 winner of best croissant and pain au chocolat in the city by French Morning website.  This accolade pretty much guaranteed a visit to the bakery from the likes of me.  While Jane's viennoiserie were delicious and deserving of the title what actually caught my attention were the Lemon Gooey Butter Cookies.  I'm a sucker for citrus flavored desserts so I put my detective hat on to see if I could replicate these cookies myself


I was first introduced to these cake-like cookies many years ago by my friend Jill's family friend Patti.  Patti was known for her Patti Cakes which were cookies made using boxed cake mix.  It was love at first sight when I tried them back then, but the thought never crossed my mind to make them from scratch.  Tasting Jane The Bakery's cookies motivated me to give it a try.  


A Google search resulted in quite a few recipes and I ended up trying this one from West via Midwest.   The results turned out fantastic and tasted just like the ones from Jane's.  Score!

Lemon Streusel Cream Cheese Pound Cake




This was me the other day:  standing in front of the fridge and eyeing a big bag of lemons and a package of cream cheese.  What to do with them?  First thing that came to mind was a lemon cream cheese pound cake.  A) it's relatively easy to pull together and B) could feed the crowd at the office.  Done! To gild the lily a little further I decided to add a streusel topping.  Streusel qualifies the cake as a breakfast food, right?     



Be forewarned that while the batter comes together pretty quickly, the cake does take a while to bake in the oven.  I had to check for doneness three times when I made this one for the blog and even then it wasn't 100% to my satisfaction.  Seasoned bakers will notice that the inside top part of the cake could have taken another ten minutes.  Impatience on my part was to blame! It's long baking duration was most likely attributed to starting the oven at 325 degrees which was too low.  Next time I'll get the oven to 350 and then bake.  Oh well, still tastes pretty dang good!
