Bagel Bread


No one loves a bagel more than I do so how excited was I when I saw this recipe for Bagel Bread in the Oct/Nov 2018 issue of Cook's Country magazine?  Pure genius!  This was one of those things where you ask yourself, "how come I never thought of it before?"  Even better, I had a small bottle of Trader Joe's Everything But The Bagel seasoning blend lying around and thought it would be perfect to use for this recipe.

I ended up making a double batch of this recipe twice, four loaves in total!, over the span of one weekend.  Trust me, I didn't intend on doing this but I found that the first batch of loaves I made were way too salty for my taste.  Back to the drawing board it was!  So for the second batch I cut the amount of kosher salt from the recipe by half the resulting bread came out perfect!

Sliced and toasted and the bagel bread was absolutely delicious.  I think I might be a total convert to the loaf shape!

Pumpkin Spice Muffins


September/October rolls around and all that people seem to talk about is the "PSL," or pumpkin spice latte.  Me, not so much.  Don't get me wrong, I love pumpkin in many forms but coffee is not one of them.  I'm much more on board the "PSM" train, aka Pumpkin Spice Muffin.


I have a go-to pumpkin bread recipe that I've been making for years and to this day still remains a favorite in my repertoire.  But after seeing these Cook's Country pumpkin spice muffins posted on America's Test Kitchen's Instagram account recently I was convinced to try something new.  Plus, I'm always a sucker for streusel topping!  For an additional crunch I sprinkled the muffins with pumpkin seeds to finish them off. 


I was very pleasantly surprised with how yummy these muffins were.  Granted, I did have my concerns about their sweetness after noting the two cups of sugar in the recipe but I couldn't have been more wrong.  The muffins were really delicious with just the right hint of sugar.  I highly recommend you make them for breakfast or your next brunch.

Washboards from ATK's The Perfect Cookie & a Giveaway



If you follow my blog then you already know how much I love everything that comes out of America's Test Kitchen.  I'd even wager to say I'm their #1 fan, albeit a self-appointed title to be sure!  So when they reached out to me inquiring if I was interested in reviewing their new baking book, The Perfect Cookie,  there was no hesitation on my part whatsoever.   


 
If ever there was a cookbook with my name written all over it, this was it.    As I flipped through the countless pages of beautiful imagery I noted that almost every foolproof recipe you could imagine was covered.  No doubt you'll be like me, reaching for this tome again and again when you've got those cookie cravings.  [Notice the myriad of Post-Its peeking out from my copy!]


Since I've been baking along with ATK for ages now I've made quite a lot of their cookie recipes already.  For this review I wanted to try one that was new to me.  I'm a sucker for coconut in baked goods so I was immediately drawn to the Washboards.  Crispy, crunchy and lightly sweetened with coconut flavor, these would be the perfect treat to serve along with ice cream or a cup of tea.


Even better, because they were "slice and bake" cookies I could make the dough days in advance and bake them off whenever I wanted.   Forming and shaping the washboards couldn't be easier and the ridges on top are made using a fork.  The cookies baked to a gorgeous golden brown and after a cool down I devoured three of them straight away.   The texture and flavor actually reminded me of a coconut flavored Biscoff cookie....so delicious!   As far as I'm concerned ATK is batting a thousand with this recipe and the new cookbook.

Oatmeal-Raisin Cookies from Naturally Sweet Cookbook & a Giveaway


I've mentioned before on this blog that diabetes runs in my family which isn't necessarily ideal when you love to bake as much as I do.  Inevitably this question always seems to come up when I make something for the relatives, "can you make it less sweet"?      

How excited was I when America's Test Kitchen recently came out with a cookbook specifically dedicated to baking with less sugar, entitled Naturally Sweet.  If this book didn't have my family's name written all over it I don't know what would! 


The recipes in the book use alternatives to the traditional granulated white sugar, which helps to bring down the level of sweetness.  Sucanat, an unrefined cane sugar, is the one predominantly used in Naturally Sweet.   

I was keen to test out a recipe to see if the cookbook really lived up to its claims and decided to have a go at one of my all-time favorite cookies, Oatmeal Raisin.   The cookie dough came together really easily, although you do have to take the extra step of grinding the Sucanat in a spice grinder. 


The cookies browned beautifully in the oven with crispy edges and a soft center, just how I like them!  They tasted great and had a very nice molasses flavor to them.  I didn't even miss the extra sugar to be honest but the true test was to get other people's review.

I brought the cookies in to the office but didn't disclose that they were low sugar.   My co-workers devoured them and when I revealed that they were made with less sugar they were completely surprised.  One person even said I could have cut the sweetener a little more and they still would have been fantastic.  Now that's a testimonial if I ever heard one!  I plan on making more recipes from the cookbook for my family to enjoy this holiday season.

Gluten-Free Funfetti Vanilla Cupcakes


I'm making my way through ATK's amazing newest publication,  The How Can It Be Gluten Free Cookbook,  and this weekend I decided to give their birthday cupcakes a go.  It's a basic vanilla cupcake with vanilla frosting, but I funfetti-d them by adding rainbow sprinkles to the cake batter.  

If you have children who are gluten intolerant you MUST make these cupcakes for their next birthday party.  The cake itself was moist and delicious and their easy vanilla frosting tasted just like whipped vanilla ice cream.   

So far I'm batting 1000 with every recipe I've tried so far.  I can't sing it's praises enough.  Run, don't walk, to buy it!  Check out this site for a few of the recipes including buttermilk waffles, light and fluffy biscuits and chocolate chip cookies.

Gluten-Free Strawberry Tartlets


Just a quick post this time!  I spent the weekend trying out more recipes from ATK's How Can It Be Gluten Free Cookbook.  I don't have a gluten intolerance yet I find myself drawn to these gluten free treats.  Why?  Because you seriously can't tell!!   The chocolate layer cake I made the other week was so unbelievable that I was anxious to give the other recipes a go.  Luckily I had some pastry cream in my fridge and it made absolute sense to try out the tart shell recipe.  I tell you it's spot on...like the kind you'd find at any patisserie.  The perfectly crumbly sablĂ©e-like crust is the ideal foundation for the pastry cream and fresh fruit.  Who needs Paris, or gluten for that matter???

Gluten-Free Chocolate Layer Cake and a Giveaway


Ask anyone who knows me really well and they'd probably tell you that calling me a skeptic would be quite apropos.   I can't help it if I don't believe something right off the bat, just my nature I guess.  Which is why I couldn't wait to get my hands on "The How Can It Be Gluten Free Cookbook" when America's Test Kitchen asked me if I would like to do a review.   I was dying to find out for myself if their gluten-free recipes, especially the baking ones, were as incredible as they have touted.  Several people in my circle are gf and being able to bake for them without having to sacrifice taste and texture would be incredible.

I knew I had to test a baking recipe and it had to be something that I normally would never make from scratch without gluten.  I've dabbled a little bit in gluten-free baking before and although most of the results were pretty good they never really did compare to "normal" baking.  


A friend recently commented that I don't have enough layer cakes on my blog so I immediately honed in on the Chocolate Layer Cake.  Believe me when I tell you that this cake is A-M-A-Z-I-N-G!  Not only does it bake up beautifully, with a tight and tender crumb, but it tastes just like a rich chocolate cake WITH gluten would!  I was completely stunned by how delicious it was.   To corroborate my findings I had a few friends blindly taste a slice and they enthusiastically gave it two thumbs up.  Then when I told them afterwards that the cake was gluten-free they were completely shocked...and kept on eating.  If that's not proof, I don't know what is!

I can't wait to try the other baked (and non-baked!) recipes; think the the pies are especially calling my name.   Trust me when I say that this cookbook is the real deal, but I should have already known that when it's coming from the folks at ATK!

Salted Caramels and a Giveaway


My holiday candy making has pretty much been limited to cashew toffee, a well loved favorite among my family and friends.   Ironically, for me not so much.  I guess after all these years of making it I've become immune to the crunchy, buttery candy and was actually on the lookout for new inspiration.  

Lucky for me the very kind folks at America's Test Kitchen sent over a copy of one of their latest publications, DIY Cookbook.   Score!  I'm one of those people who's all about giving homemade food gifts for the holidays.  What better way to show you care than with something from your own kitchen?  I immediately headed to the sweets chapter and gravitated towards the Salted Caramels.  

There's nothing I love more than a sweet/salty combination and these candies fit the bill perfectly.  As with all of ATK's recipes this one was easy to follow and the results were fantastic.  I think my friends and family will definitely welcome to new addition to my candy repertoire.

Jam Thumbprints


These jam thumbprints are the latest addition to my holiday cookie repertoire.  I first saw the recipe on America's Test Kitchen's Feed and knew I had to make them.  The secret to the rich and tender cookie is cream cheese, definitely a good thing.   On top of that, if you're looking for a kid-friendly recipe look no further!

I filled my cookies with raspberry, apricot and pineapple jam and I  love how the centers look like  sparkling jewels.

A few months ago I mentioned that I was one of five lucky bloggers to win a year-long scholarship to America's Test Kitchen's Online Cooking School.  So far I've had the chance to try out a few of their courses and I have to say they're pretty fantastic.  But that's no surprise to me since I'm one of America's Test Kitchen's biggest fans.

TREATS Goes to School...

...cooking school that is, specifically the online cooking school from America's Test Kitchen!

When I first heard about the scholarships ATK was offering to five bloggers to attend their online cooking school I immediately applied.  Why, you may ask?  "Don't you already know how to cook?"  Well, yes and no.  Sure I can follow a recipe but I wouldn't say I'm an instinctual cook.  My cooking skills are no where near on par with my baking skills so that's why I decided to enter the contest.  If there's anyone that could elevate my abilities it would definitely be ATK.

Can you imagine how ecstatic I was when I found out I was chosen as one of the lucky winners?  I felt like I'd won the lottery!  So over the next year you'll have to excuse me if I take a slight detour now and then from baking-related posts.   I'm on a mission to become the next Top Chef - not really, but a girl's got to aim high, right?  Wish me luck!

Black and White Cookies


"Look to the cookie!"  Who would have thought that a simple black & white could evoke such wise and thought-provoking words from Jerry Seinfeld?  Seinfeld aside, these iconic New York cookies will bring about harmony to your taste buds...guaranteed! 

If ever there was one cookie that I always bought and never considered making at home it would have to be the black & white.  Why?  Mainly because if I was eating one most likely I was in NYC enjoying it.  Not a bad thing if you ask me. 


Considering my budget can't support flying to the east coast on a whim I had to find a cheaper alternative to get my cookie fix.  America's Test Kitchen came to my rescue with this recipe.

These cookies seriously taste like the ones you'd find in a NYC deli.  It's got the authentic taste of the slightly lemony cake/cookie frosted with chocolate and vanilla fondant.  I swear you'll feel like you're back in the Big Apple!

Icebox Cheesecake


I had the pleasure of tasting a really delicious homemade cheesecake a few weeks ago that was unlike any I'd had before.  This wasn't your typical New York style, i.e., super dense and heavy.  Instead it was light as a feather with the perfect balance of cream cheese and subtle sweetness.  Topped with fresh berries it was too tempting for me to resist.  Ok...I admit I helped myself to more than a few slices!

Weeks passed and I still kept thinking about that cheesecake - surely a telltale sign that I had to make it.  Armed with the only clues I had, that it contained cream cheese, cream and gelatin, I began my research online.


Luckily I found this no-bake cheesecake recipe from Cook's Country TV, sister show of America's Test Kitchen.  The best thing about this version is that you only bake the graham cracker crust, not the filling.  No pesky water baths and cracked tops to deal with....right up my alley!  After tasting the finished product I'd say I think I came pretty darn close to the original.    

If you're craving a cheesecake that won't set you back a few heart attacks I definitely recommend this one.

Mimi's 21st Birthday Cake

My cousin is celebrating her 21st birthday this week so I wanted to make her a cake to celebrate the momentous occasion. She requested chocolate so I turned to one of my favorite recipes, Old-Fashioned Chocolate Layer Cake, from America's Test Kitchen: Test Kitchen Favorites. The cake is really moist and tender and the frosting is like a whipped ganache, not too sweet with great texture. Hope she likes it.
