Small Batch Lemon Poppy Seed Muffins

 

I've noticed there's been a trend lately in small batch baking.  I, for one, definitely welcome this because as someone who lives by myself I just don't need a dozen of this or that.  Normally I would just give my bakes away to family and friends, and I'll still do that, but with small batch bakes I don't have to!

This recipe for Lemon Poppy Seed Muffins from Hummingbird High caught my attention because of their exceptionally tall tops, just like ones you'd find at a bakery à la Levain.  Remember that Seinfeld episode where Elaine was obsessed with just the muffin tops?  That's what these muffins reminded me of!  You can bet that Elaine would be coveting these beauties.

You get four very generously sized muffins with this recipe which was the perfect amount for me to test and also enjoy.   One thing I noticed right off the bat was the intense, but not overpowering, lemon flavor in the muffin.  This comes from rubbing the fresh lemon zest with the granulated sugar, as well as the addition of fresh lemon juice and lemon oil.  The key to getting that beautiful rise on the muffins is to make sure your ingredients are at room temperature so that the batter is well mixed.  

As soon as the muffins came out of the oven I had to have a taste and I was definitely not disappointed.  They were delicious, moist, fluffy and above all, not too sweet!  I highly recommend giving this recipe a try.

Pumpkin Spice Muffins


September/October rolls around and all that people seem to talk about is the "PSL," or pumpkin spice latte.  Me, not so much.  Don't get me wrong, I love pumpkin in many forms but coffee is not one of them.  I'm much more on board the "PSM" train, aka Pumpkin Spice Muffin.


I have a go-to pumpkin bread recipe that I've been making for years and to this day still remains a favorite in my repertoire.  But after seeing these Cook's Country pumpkin spice muffins posted on America's Test Kitchen's Instagram account recently I was convinced to try something new.  Plus, I'm always a sucker for streusel topping!  For an additional crunch I sprinkled the muffins with pumpkin seeds to finish them off. 


I was very pleasantly surprised with how yummy these muffins were.  Granted, I did have my concerns about their sweetness after noting the two cups of sugar in the recipe but I couldn't have been more wrong.  The muffins were really delicious with just the right hint of sugar.  I highly recommend you make them for breakfast or your next brunch.

English Muffins & a Giveaway



I'm a creature of habit when it comes to breakfast.  My trusty standbys range from fresh fruit with Greek yogurt and crunchy granola to Honey Nut Cheerios or hard boiled eggs.  But one of my all time favorites has to be English muffins.   I even have a toaster oven in my cubicle at work specifically for this purpose.  Is there anything better than the smell and taste of a freshly toasted muffin smothered in butter?  I think not.


Recently I received a copy of  "Cook It In Cast Iron" from my friends at Cook's Country.  If ever there was a versatile workhorse in your kitchen it would be a cast-iron skillet.  And the fact that you can buy a fantastic one for under $35 makes it all the more appealing.


Cast iron is renowned for it's heat retention which makes it ideal for frying and searing on the stove top, but did you know it's also great for baking?  Me neither!  As I was browsing through the cookbook I was amazed at the number of bread and biscuit recipes there were but the one that immediately caught my eye was for English muffins.  I'd never dreamed of making this breakfast staple at home but why not give it a try?


Believe me when I tell you I am now a convert to homemade English muffins, especially when they bake up so fluffy, tall and delicious.   Don't be intimidated by this recipe at all because it's really straight forward and easy to follow.  All I can say now is, Thomas' who???
