Strawberry Shortcake

 
Recently Kitchn did a taste test of four Strawberry Shortcake recipes and the winner came from culinary icon James Beard.  The recipe was actually his mother's and uses finely crumbled hard-boiled egg yolks to give the shortcake a rich and tender crumb.  I had a few baskets of freshly picked berries from my hometown in the San Joaquin Valley that were itching to be consumed.  No better time than the present to see if these shortcakes lived up to the hype.  
 
 
While the recipe calls for making the dough by hand I always find it's easiest to let a food processor do the hard work.  In my opinion the less you handle biscuit or pie dough the better.   As I was making the shortcakes I was reminded of British style scones.  The ingredients and techniques were actually quite similar, except the shortcakes used heavy cream instead of whole milk as the liquid.


One thing I could have done without was the hour long chill in the fridge once the dough rounds were cut.  I'm an impatient baker and would have preferred putting them in the oven straightaway.  [Maybe I'll try that next time.]  After fifteen minutes in a very hot oven the shortcakes came out beautifully golden brown.  Once cooled I split one open to have a taste.  I have to admit they did live up to their reputation.   The shortcake was rich in flavor and tender in texture.  I generous spoonful of lightly sweetened strawberry slices and a dollop of whipped cream was all that was needed for a delightful summertime dessert.

Buttermilk Biscuit Jammers

Every now and then I'll see a bake posted on Instagram and think to myself, "Now why didn't I think of that?"  This exact thing happened recently when I saw SF Cooking School post a picture on their Instagram stories of their take on Grand Central Bakery's famous buttermilk biscuits filled with jam.   These Buttermilk Biscuit Jammers are a genius combination of flaky, buttery biscuit filled and sweet, fruity jam.  I had to make some for myself.   
 
 
If you search google you can find Grand Central's recipe for their jammers pretty easily, like this one, but since I still had plenty of White Lily self-raising flour leftover from a past trip to Charleston I made my version of the buttermilk biscuit jammers with that instead.  The recipe was one I found on White Lily's Instagram account and only requires four ingredients: self-rising flour, butter, buttermilk and jam.     


The key to getting super flaky biscuits is to make sure all of your ingredients are COLD!  It also doesn't hurt that this particular recipe has a lamination technique that produces multiple layers.  Once I combined the flour and grated butter in a bowl I left it in the freezer overnight to ensure it was at the ideal temperature.  The next day I mixed in the cold buttermilk and shaped, folded, cut and filled the dough.  Use your favorite jam to fill the biscuits.  I used some store bought as well as homemade jams so I had a nice variety. 


As I write this post I literally just polished off my third biscuit.  They are THAT good and everything you'd want in a buttermilk biscuit.  Next time I make them I'll adjust for the following: cut the biscuits with slightly smaller cutter (using a 2" round cutter) and make the jam indentation a bit wider (so you get more jam!).

Chinese Almond Cookies

The Lunar New Year falls on Friday, February 12, 2021 and marks the start of The Year of the Ox.  In my family Tết is a major holiday centered around family and food.  Obviously this year we won't have the extended family gathering that we normally would, but we'll still celebrate nonetheless.

Even though these Chinese Almond Cookies aren't your typical New Year's fare I thought they'd be a great to serve as dessert.   I found the recipe from use real butter's blog and it couldn't be simpler to make.  My favorite thing is how the tops of the cookies shine like lacquer, stemming from the brush of egg wash they receive just before being baked.  The almond flavor really comes through from the almond flour and almond extract in the recipe.   

These cookies are delicious and not too sweet and can be served all year long, not just for New Year's.

Raspberry Jam Shortbread Hearts

 

January came and went in a flash without much baking on my part.  To be honest I was a bit burnt out from all the holiday baking I'd done and on top of that work was keeping me busy, but now I'm back and raring to go.   First up are these super tasty and cute Raspberry Jam Shortbread Hearts which are perfect for Valentine's Day.  The crispy, buttery shortbreads are filled with my homemade, tart raspberry jam and are utterly delicious.  They actually remind me of the British "Jammie Dodgers" biscuit.  

I used a heart shaped thumbprint cookie stamp I bought from Williams-Sonoma a few years ago.  The set also comes with a rectangle and circle shape and cuts and shapes the cookie dough perfectly.  You get professional looking results with little to no effort!

For the shortbread dough I tweaked my favorite clotted cream shortbread recipe.  Since I didn't have any fresh clotted cream I just replaced that amount in the recipe with the same amount of butter.  The dough is super forgiving and you can't really mess it up.  My main tip is to roll the dough to at least 1/4-inch thickness; any thinner and it will be harder to get the nice embossed design on the cookie. 

Gift these cookies to your loved ones for the tastiest Valentine.

Bacon & Maple Syrup Scones


Sometimes you go to a restaurant and there's one item on the menu that really stands out and forever sticks in your mind.  When I went to Frenchie Covent Garden this past July that thing turned out to be their snack of Bacon Scones with Maple Syrup.  

 
One bite and I was a complete goner.  Salty, sweet, smoky and savory....what more could I ask for?  They were so good, in fact, that I not only had them as my starter but later on as my dessert!  Don't get me wrong, the entire meal and service at Frenchie was fantastic, but one month on and I am still dreaming about those amazing scones.    



Lucky for me the recipe for their signature dish was readily available on the internet.   The ingredients are easy to gather and the dough comes together super quick.  Try and use the best maple syrup you can find for this recipe.  I finished off the glazed scones with a light sprinkling of smoked Maldon sea salt to further enhance the smoky flavor.    

 
While the restaurant's version will always taste best in my mind, I think these homemade beauties are a pretty good substitute - and I don't need to travel 5,000 miles to get them!

Clotted Cream Shortbread


What to do when you bring home eight tubs of Rodda's clotted cream from London, give away six and keep two for yourself?   Well, you eat one tub, of course, slathered on scones with tons of jam.   Absolute heaven!  The dilemma then became the fate of the remaining tub, which was nearing its expiration date.   I searched on Rodda's website and found their recipe for Clotted Cream Shortbread...jackpot! Shortbread made with clotted cream?  The baker in me was skeptical, to be sure.  Would the clotted cream compromise the texture of  the shortbread.  Only one way to find out.   
 
 
As soon as the dough came together I knew these cookies would be fantastic.  It had the exact same look and feel as other shortbread I'd made before and rolled out like an absolute dream.   Look how beautifully the dough held the shape and  design of the strawberry cookie cutter I used.  My toughest critics, aka my family, tried the cookies and gave them the thumbs up.   Just the right amount of crunch with a hint of sweetness.   Perfect served with ice cream or fresh strawberries and clotted cream.

Strawberry Shortcake


C and E came over for dinner recently so we could all catch up on the latest news (and gossip!).   Dinner was light fare by my standards, chicken tortilla soup, but dessert called for something more substantial.   As soon as I saw the ripe, juicy strawberries at the market I knew I had to make shortcakes for the girls. 

Strawberry shortcake is so simple to make and so delicious.  All you need are flaky, tender biscuits, sliced strawberries and lightly sweetened whipped cream - what could be easier?


C is gluten-intolerant so I made the biscuits with C4C flour and, as expected, they came out fantastic.  I've waxed poetic about this product before and I stand by my original testimony - I'm telling you, the stuff is truly amazing!  Instead of topping the strawberries with plain whipped cream I like to make it with cream cheese.  The slight tang of the cheese perfectly counterbalances any heaviness in the dessert.

When strawberry season is in full force you have to make these strawberry shortcakes.  You won't regret it!
