Vanillekipferl

Vanillekipferl are crescent-shaped almond shortbread cookies traditionally made at Christmas time in many European countries, e.g., Germany, Austria and Switzerland. They're a very close cousin to nut snowballs or Mexican wedding cookies, but the dough is much smoother with the addition of almond flour.  I love that they aren't too sweet so you don't feel guilty eating so many.  I'll be including them in this year's holiday cookie box.

Pretty in Pink Confetti Cake

Doesn't this Pretty in Pink Confetti Cake just bring a smile to your face?  It just screams Festive! and Fun!, right?  I made this beauty for my friend's birthday using Cake By Courtney's white vanilla cake recipe and then adding rainbow sprinkles to the batter.  Note: I baked the cake layers using three 6-inch round pans and had enough batter leftover for six cupcakes.  For the frosting I used my favorite Swiss meringue buttercream recipe.

Iced Chocolate Star Cookies

I've had this set of Nordic Ware cookie stamps for a while but never really used them.  That is, until I  was inspired by this post on Beyond The Butter's blog and made these Iced Chocolate Star Cookies.  One glimpse of the gorgeously iced chocolate cookies and I was motivated to bring out the stamps from hiding.  The stamp does all the work, and with very little effort you get the most beautiful cookies.  That's a win-win situation in my book!

Beyond The Butter calls these cookies "Oreos" because they are jam-packed with chocolate flavor, similar to the famous filled sandwich cookie.  But I actually think these cookies taste even better because they are nice and soft.  They almost remind me of a brownie, in cookie form.  I'll definitely be adding these beauties to my holiday cookie list.

Happy Bee-Day Cake

How cute is this Happy Bee-Day Cake?  I really love how it turned out.  The occasion was for Laura's birthday party and her mom Julia had sent over some ideas with a bee theme.  I've been making celebration cakes for Laura even before she was born so I was happy to continue the tradition and make one for her second birthday.  Here's what baby shower and first birthday cakes looked like.

The cake is comprised of Stella Parks' White Mountain Layer Cake and Swiss Buttercream in vanilla and strawberry flavors.  Stella's white cake recipe is one of my absolute favorites.  The crumb is so moist and tender.  If you haven't already bought her cookbook you need to!  The buttercream is a traditional Swiss meringue style.  I flavored half of the frosting with ground up freeze-dried strawberries which gives you an intense fruit flavor without the additional moisture.  The perfect balance of sweet and tart.

Happy Birthday Laurita!

Zebra-Striped Shortbread Cookies

I knew I had to make these Zebra-Striped Shortbread Cookies as soon as I saw them pictured in the December 2018 issue of Bon Appetit magazine.   Chocolate and vanilla shortbread are nothing new; I've made a checkerboard version for years each Christmas.  What I love about this version is the fresh and modern take on a classic.  The dough could not have been easier to put together and shape.  Next time I'm going to divide the two colors even more so that the stripes look super realistic!

Zebra Bundt Cake

If you peeked in to my pantry you'd think I was trying to set up my own kitchen housewares shop.  I can't help it - I'm the first to admit I'm a total addict.  Call me a sucker for the latest cake pan or baking equipment out there.

The inspiration for this Zebra Bundt Cake stemmed from my recent acquisition of NordicWare's Kugelhopf pan.  I'm a huge fan of this company and love all their bundt pans.  Over the years I've amassed quite a collection because they never seem to fail in terms of quality and aesthetic.  I call it effortless baking when the pan does all the cake decorating work for you.

My intention was to make a marble cake and when I happened upon Bakers Royale's Zebra Bundt on Pinterest it immediately caught my eye.  I just love how the alternating stripes of vanilla and chocolate batter make the cake look so interesting and inviting.  When I took a closer look at the recipe I was even more pleased because it was based on one from Tish Boyle's The Cake Book.   Tish's cookbook is one of my favorites so I knew it was going to be a winner.  I wasn't wrong.

The crumb on this cake is really incredible, so tender, moist and melt in your mouth.  I was a tad bit concerned that the depth of the bundt pan would require extra baking time, leading to a drier cake, but this was not the case at all.  I'll definitely be making this recipe again!

Elvis & The Easter Bunny Pound Cake

I tell you this cake was long overdue.  Last year I snagged this awesome Nordic Ware pan in a Williams-Sonoma sale and couldn't wait to use it...now I FINALLY can!  Unfortunately it's no longer available but hopefully you can find something similar.

In trying to choose which cake recipe to use for the Easter Bunny I first searched my blog.  How surprised was I to discover that one of my favorites, Elvis Presley Pound Cake, was no where to be found.   I've made this Saveur recipe so often that I was guilty of taking it for granted.  Well, no more!   Apparently this cake was one of the King's favorites and I can easily see why - a moist and rich with a "love me" tender crumb.

HAPPY EASTER TO ALL!!

Vanilla Cupcakes

After 9+ hours of binge watching House of Cards Season 4 this weekend I must say I was more than happy to get off my bum and do some baking.  If you haven't seen the show yet do yourself a favor and start.  It's seriously some of the best television ever and the latest series does not disappoint in the least.

While the show is dark, cunning and ruthless these Vanilla Cupcakes are anything but; you could even call them "anti-Underwood".  I was craving something happy and light and these beauties fit the bill perfectly.  Even better, sour cream was used in the recipe, an ingredient of which I had plenty in the fridge.   The cupcake recipe can be found here on the Cupcake Project and I frosted them with Cook's Illustrated Easy Vanilla Buttercream.

I'm definitely feeling House of Card withdrawals, already!, but hopefully these cupcakes will ease the pain until next year.   Please, please, please Netflix...there MUST be a Season 5!

Gluten-Free Funfetti Vanilla Cupcakes

I'm making my way through ATK's amazing newest publication,  The How Can It Be Gluten Free Cookbook,  and this weekend I decided to give their birthday cupcakes a go.  It's a basic vanilla cupcake with vanilla frosting, but I funfetti-d them by adding rainbow sprinkles to the cake batter.

If you have children who are gluten intolerant you MUST make these cupcakes for their next birthday party.  The cake itself was moist and delicious and their easy vanilla frosting tasted just like whipped vanilla ice cream.

So far I'm batting 1000 with every recipe I've tried so far.  I can't sing it's praises enough.  Run, don't walk, to buy it!  Check out this site for a few of the recipes including buttermilk waffles, light and fluffy biscuits and chocolate chip cookies.

Black and White Cookies

"Look to the cookie!"  Who would have thought that a simple black & white could evoke such wise and thought-provoking words from Jerry Seinfeld?  Seinfeld aside, these iconic New York cookies will bring about harmony to your taste buds...guaranteed!

If ever there was one cookie that I always bought and never considered making at home it would have to be the black & white.  Why?  Mainly because if I was eating one most likely I was in NYC enjoying it.  Not a bad thing if you ask me.

Considering my budget can't support flying to the east coast on a whim I had to find a cheaper alternative to get my cookie fix.  America's Test Kitchen came to my rescue with this recipe.

These cookies seriously taste like the ones you'd find in a NYC deli.  It's got the authentic taste of the slightly lemony cake/cookie frosted with chocolate and vanilla fondant.  I swear you'll feel like you're back in the Big Apple!

Ad Hoc White Cupcakes

I bought Thomas Keller's cookbook, Ad Hoc At Home, a few years ago with every intention of recreating their famous buttermilk fried chicken.  Well, I never got around to making it.  The thought of deep frying in my small kitchen was a bit too daunting (and messy!) for me.   Fortunately there are plenty of other delicious recipes in the cookbook to try.

My goddaughter's christening is this spring and, just as I did for her mother's baby shower, I'm going to assemble a dessert table for the party.  The color theme is white - so clean and crisp and  perfect for such a special occasion.

One treat I definitely want to serve are white cupcakes with vanilla buttercream frosting.  I've found some great recipes for homemade chocolate cupcakes but I haven't had much luck with white ones.  Unfortunately my favorite high ratio yellow butter cake doesn't translate well to cupcakes....I've tried a few times without any success.

So I turned to Ad Hoc At Home for inspiration.  White cupcakes are one of three cupcake recipes found in the cookbook; the other two are devil's food and carrot cake.  Anything from Thomas Keller has to be good and these cupcakes don't disappoint.   The cake is moist and delicious and they hold their shape really well.  I actually prefer them unfrosted but I dare not omit the buttercream for fear of a riot.
