Doesn't this Pretty in Pink Confetti Cake just bring a smile to your face? It just screams Festive! and Fun!, right? I made this beauty for my friend's birthday using Cake By Courtney's white vanilla cake recipe and then adding rainbow sprinkles to the batter. Note: I baked the cake layers using three 6-inch round pans and had enough batter leftover for six cupcakes. For the frosting I used my favorite Swiss meringue buttercream recipe.

Cream Tart
Often times people will ask me where I get baking inspiration from and my usual answer, "anywhere and everywhere," probably sounds a bit disappointing, but it's true! I can't pinpoint anything in particular that inspires me. Sometimes it's tasting an amazing pastry and wanting to replicate it at home or a friend texting me to to say they've seen a particular dessert and asking if I could make it.
In the case of the Cream Tart, it was seeing an Instagram post that was the inspiration. If you're on social media I'm sure you've seen these cakes before, normally shaped into numbers or letters. Apparently cream tarts have been popular since 2018, but to be honest I never really paid much attention to them. After seeing that Instagram post I did some research and discovered that cream cakes weren't so difficult to make.
When deconstructed, the tart was comprised of shortbread and some type of filling, then decorated with fresh fruit, meringues, macarons, flowers* and anything else your heart desired. Once all the components were compiled the actual cake assembly was quite simple. But you would never think that when you look at the finished cake...so visually stunning and very Instagram worthy! [*Make sure the flowers you use are safe to put on food! For the "S" cake I mistakenly put a few sprigs on baby's breath but DO NOT DO THIS! Baby's breath are toxic when consumed. They were immediately removed after taking the photo.]
I could easily see these cakes being the star dessert for a birthday, baby shower, bridal shower or any kind of party. Since so many of my friends have birthdays in September (including my own!) they just might be getting a cream tart to celebrate.

Oh Baby Shower Cake
My friends Claudio and Julia are expecting their first baby this spring, a girl. For their baby shower they asked if I could make the cake and I was more than happy to oblige. These are the exact occasions where I love to put my baking skills to good use.
For the cakes themselves Julia had requested her favorite, carrot, for the bottom tier and I suggested red velvet for the top since it was Claudio's favorite. As for the theme Julia had in mind something similar to this pink and grey themed creation she found on Pinterest. Lucky for me it didn't look too complicated once you deconstructed its parts.
Don't be intimidated by the design because it's a bit easier than you might think. Once I filled and crumb coated the three layers of carrot cake I simply piped large rosettes all around the outside with pink hued Swiss meringue buttercream. For even the novice baker this is achievable with beautiful results. Admittedly, the top tier of red velvet did require a bit more patience and skill in order to get the buttercream perfectly smooth and even. Once that was achieved I decorated with grey and pink fondant circles and applied a thin fondant ribbon at the bottom.
One trick I did learn from watching numerous episodes of Ace of Cakes is to use large boba straws as supports when doing a tiered cake. This provides structure so that the top tier doesn't sink in to the one below. The straws are so much easier to use than wooden dowels and they're super cheap too. I picked up a packet of 50 straws from the local restaurant supply store for under $1!

Raspberry-White Chocolate Bombe
I've been wanting to make this Raspbery-White Chocolate Bombe for a while now but was waiting for the right occasion. Mother's Day fit the bill perfectly. I can't think of any mother - or grandmother, aunt, sister or daughter for that matter - who wouldn't love to receive a beautiful cake like this.
"Pretty in pink" is the first thing that comes to mind when I see this cake. The pink and white colors just make me smile. This showstopper is yearning to be the center of attention at
your next celebration, e.g., bridal shower, baby shower, christening or
birthday to name a few.
Underneath a blanket of white chocolate curls lies fruit-studded
raspberry mousse and moist, tender white cake. Now I admit that I'm not
much of a fan of white chocolate; it's just too sweet for my taste. If you feel the same follow my lead and eat around it; the cake and filling are delicious!

FYI: The cake stand is a 2012 limited edition from Martha Stewart Collection that I bought at Macys. I added the ribbon embellishment. The chocolate curls were purchased at my local cake decorating store, Sugar 'N Spice.

Blush and Bashful Marshmallows
If you're an aficionada of Steel Magnolias (the movie) like I am you'll know exactly what this post title is referring to. If not, read on...a Louisiana accent may help!
Truvy: What are your colors, Shelby?
Shelby: They're blush and bashful.
M'Lynn: Her colors are pink and pink.
Shelby: My colors are blush and bashful, Mama!
M'Lynn: How precious is this wedding gonna get, I ask you?
Shelby: My colors are blush and bashful. I have chosen two shades of pink, one is much deeper than the other.
When I set about making Valentine-themed marshmallows I
was instantly inspired by the movie since it's one of my all-time favorites.
I started with the raspberry marshmallows
that I made this past Christmas and tweaked the recipe just a little to achieve the bi-color effect I was after.
Half of the recipe became blackberry (the deeper pink) and the other
half was raspberry/strawberry.
I daresay if Shelby had seen these lovely pink marshmallows she would have served them at her wedding!

Pink Daisy Cookies
Apologies in advance to all flower lovers since these daisies aren't botanically correct, but you'll forgive me won't you? The Barefoot Contessa featured these cookies on her show a while ago, in white and yellow, and I knew immediately I wanted to make a pink version.
Perhaps I went a bit overboard with the abundance of pink tones in the cookie and packaging, but I can't help myself, it's one of my favorite colors. How cute would these be as the favor at a birthday party, baby shower or bridal shower?
