Pumpkin Cupcakes

Pumpkin Cupcakes are  perfect for your Halloween or autumn gathering.  For the chocolate cupcake I used Cook's Illustrated's recipe which is super easy to make and comes together by hand in one bowl.  My favorite Swiss meringue buttercream was piped on top of each cupcake to create the pumpkin effect.   


 
Swiss Meringue Buttercream 
 
5 large egg whites (~150g)
1 1/4 cup granulated sugar
1 tsp salt
1 tsp vanilla extract
1 lb unsalted butter cut in to pieces, at room temperature
 
Place sugar, egg whites and salt in the heat-proof bowl of an electric mixer. Set bowl over a pan of gently simmering water, and whisk until sugar has dissolved and egg whites are hot to the touch, about 3 minutes. Test by rubbing the mixture between your fingers; it should feel completely smooth.

Transfer bowl to mixer stand. Using the whisk attachment, beat on high speed until mixture has cooled completely and formed stiff and glossy peaks, about 10 minutes.

Add the butter, one piece at a time, and beat until incorporated after each addition. Don't worry if the buttercream appears curdled after all the butter has been added; it will become smooth again with continued beating. Add vanilla extract, and beat just until combined.

Lemon Posset and Lemon Cupcakes

 

For the Lemon Lovers Table that I recently created I included some citrus-infused treats.  At each place setting there was a decorated sugar cookie to welcome my guests.  Other desserts included the cutest  lemon petit-fours from Trader Joe's and homemade Lemon Posset and Lemon Cupcakes.


I had my first taste of lemon posset at ad hoc restaurant and I was immediately hooked on the creamy, tangy dessert.  It was so refreshing, especially after having ad hoc's famous buttermilk fried chicken!  Luckily I found a recipe from Cook's Illustrated that couldn't be simpler to make using only three ingredients: heavy cream, sugar and lemons.


For the lemon cupcakes I used a vanilla cake recipe from The Cupcake Project.  It was the winner of a recent taste test from The Kitchen.  While the cupcakes were really tasty, I actually prefer a cake that has a tighter crumb to it.  I frosted the cupcakes with Swiss meringue buttercream that was mixed with pre-made lemon curd. To pipe the buttercream swirls I used a large petal tip (Ateco #126).  I confess it was a decorating technique I pinched from Violet bakery in London.

Salted Caramel-Filled Brownies

I never would have thought to bake brownies in the form of a cupcake but I was easily convinced to give it a try when I saw these Salted Caramel-Filled Brownies featured on the cover of Cook's Country's Feb/Mar 2021 issue.  The combination of sweet caramel and sea salt is always a winner in my book.  The recipe features variations of the filling, like chocolate ganache and peanut butter ganache, which sounded delicious too. 

The trick with this recipe is to make sure you use parchment paper cupcake liners which are different from the paper liners you'd find at the supermarket.  I bought these ones from Amazon and I heard some Target stores also carry it.  If you don't use the parchment liners you run the risk of the brownies sticking to the liner.  Not pretty!

My Easter Table


Self-isolation and social distancing sucks and I think most people would agree with me on that.  I've been in it for a little over a month at this point, ever since San Francisco issued the shelter in place orders at the beginning of March.  I have my good days and bad days to be sure, but with Easter coming up I was determined to do things that would lift my spirits.  Plus, it gave me a great excuse to do even more baking!



Although I can't host the Easter brunch that I would have liked this year I can still decorate my table, right?  I took advantage of the online promotions at Williams-Sonoma and Pottery Barn and bought a colony of ceramic bunnies and eggs to use as props.  I also found some really cute paraphernalia and tons of Easter candy at my local Target.
 


I didn't really have any preset idea of what I wanted my table to look like.  My main goal was to create something that was pretty and I think I've accomplished that.  Pastel colors are used throughout the tablescape to evoke spring and renewal.  And who doesn't need that right about now?  



The baked goods I made included iced sugar cookies, mini bundt cakes and gluten-free carrot cupcakes.   At the center of the table was the pièce de résistance, an Easter bunny made of Rice Krispies treats.   Can it get any cuter than that?  It was so simple to make using a Nordicware Easter bunny pan I bought a few years ago (similar pan found here.)


This Easter table is bringing all the good feels for me and I hope it's  sparked a little joy for you.  Happy Easter to anyone who is celebrating and to everyone out there, please stay safe, healthy and STAY HOME!

Cake Pops & Surprise-Inside Heart Cupcakes


Since I made the Surprise-Inside Heart Cake in a 6-inch size rather than 8-inch I ended up with some extra cake batter and buttercream frosting.  I couldn't bring myself to bin them so I asked myself what could I do?   Immediately I thought of Cake Pops and Surprise-Inside Cupcakes!  I love how one dessert can produce two more.


The cupcakes are really simple to put together, trust me.  Since I only ended up using half of the baked pink cake I turned the rest in to little heart shaped cake bites with the help of a petit fours cutter.  To make the cupcakes I poured a spoonful of the white cake batter in to a paper lined muffin  pan and placed the heart cake bite standing upright.  I then spooned more cake batter over to cover it completely and baked like normal.  A swirl of the buttercream and a dusting of pink, red and white jimmies finished it off.  It's not until you slice the cupcake do you discover the surprise heart inside!


Cake pops were the perfect way to use the leftover cake trimmings and buttercream.   I recommend reading this post from Bakerella who is the queen of cake pops.  The technique couldn't be easier.  You just break up the cake in to crumbs and mix in some buttercream to create a Play-doh like dough.  Roll in to ping pong sized balls and refrigerate until firm.   Then you dip the cake balls in to melted candy melts (I got mine from Michaels) and decorate with sprinkles!

Cupcake Bouquet


Just in time for Valentine's Day, something sweet and unpredictable.  Why not forgo the usual gift of flowers and make your Valentine a bouquet made of beautiful cupcakes instead?   Seriously, these tasty treats may look complicated but they couldn't be easier to make.  All you need are Russian decorating tips and you'll be turning out professional looking decorated cupcakes in no time. 


For these cupcakes I used my new favorite cake and buttercream recipe from Bravetart's latest cookbook.  The white cake is so moist and velvety with a melt-in-your-mouth crumb and her marshmallow buttercream is a game changer.  Even better, the buttercream pipes like a dream with these decorating tips.
