Cake Pops & Surprise-Inside Heart Cupcakes


Since I made the Surprise-Inside Heart Cake in a 6-inch size rather than 8-inch I ended up with some extra cake batter and buttercream frosting.  I couldn't bring myself to bin them so I asked myself what could I do?   Immediately I thought of Cake Pops and Surprise-Inside Cupcakes!  I love how one dessert can produce two more.


The cupcakes are really simple to put together, trust me.  Since I only ended up using half of the baked pink cake I turned the rest in to little heart shaped cake bites with the help of a petit fours cutter.  To make the cupcakes I poured a spoonful of the white cake batter in to a paper lined muffin  pan and placed the heart cake bite standing upright.  I then spooned more cake batter over to cover it completely and baked like normal.  A swirl of the buttercream and a dusting of pink, red and white jimmies finished it off.  It's not until you slice the cupcake do you discover the surprise heart inside!


Cake pops were the perfect way to use the leftover cake trimmings and buttercream.   I recommend reading this post from Bakerella who is the queen of cake pops.  The technique couldn't be easier.  You just break up the cake in to crumbs and mix in some buttercream to create a Play-doh like dough.  Roll in to ping pong sized balls and refrigerate until firm.   Then you dip the cake balls in to melted candy melts (I got mine from Michaels) and decorate with sprinkles!

4th of July Cake Pops


When it comes to cake pops I'm a bit torn.  On the one hand their cuteness really captures my fancy, but on the other their intense sweetness has my teeth aching.  Dilemma, dilemma.   The solution?  Make them, just don't eat them!


This time, instead of using a boxed cake mix and ready-made frosting, I made the cake pops with a  homemade high-ratio yellow butter cake and lemon curd swiss meringue buttercream.  Using homemade stuff cuts in to the sweetness a bit, but not by much.  

I decorated the pops with red, white and blue nonpareils to celebrate the 4th of July.   Hopefully the kids coming to my brother's BBQ this weekend will enjoy them, not so sure about their parents!

Cake Pops


If I were to say Bakerella what immediately comes to mind?  Cake pops of course!  They're taking the blogging world by storm.  I got Bakerella's book last fall and I'd been meaning to try them out ever since.  The  book is chockablock full of so many creative ideas.   

The cake pops in the picture are lemon cake mixed with lemon frosting and then dipped in Ghiradelli white chocolate candy coating.  I thought the citrus flavors would balance out the sweetness factor.  Uh..not really.  No joke, cake pops are SWEET - we're talking "take me out of my misery and just yank out my molars."  

Readers of this blog probably already know I'm not a fan of overly sweet treats.  If you're like me then cake pops might not be the ideal dessert for you.  But they are so darn cute!  Baking crisis...what to do, what to do?  Got it...I'll just save them for the little ones!  No doubt they'll be delighted with the sugar rush.   Better them than me!
