Poinsettia Red Velvet Cake

 

I asked my friend Gracie what kind of cake she wanted me to make as XMAS gift and she immediately said red velvet, which I wasn't surprised by at all.  It’s her and her son's favorite!  Since this was for the holidays I made this Poinsettia Red Velvet Cake.  

For the cake layers I used my favorite recipe from Cook's Country that produces the most tender crumb.  For the frosting I chose Stella Park's cream cheese buttercream, which is super fluffy, delicious and a lot less sweet than the traditional frosting made with cups and cups of powdered sugar.    

To give the cake a festive feel I featured a large poinsettia as the main design.  I went online and watched a few videos on YouTube on how to pipe the flower using icing.  I know my poinsettia isn't the most botanically correct, but I think it will more than suffice, and I can live with that!

Basque Cheesecake

It all started with a text from my friend Bibsy.  "Have you ever made a basque cheesecake?"  In fact, I had never and by pure coincidence I had recently saved this post from Instagram which just happened to be a Basque Cheesecake. What really drew me in was the burnt top crust.  There was something about the dark amber color that looked so inviting and delicious. Bibsy's text was just the extra motivation I needed to make the cheesecake. 
 

The recipe couldn't be simpler to make and doesn't have many ingredients since there's no crust to contend with.  My first thought when taking a whiff of the baked cheesecake was that it smelled like crème brûlée.  And there's absolutely nothing wrong with that.

Raspberry Meringue


If you've ever been to Yotam Ottolenghi's eponymous restaurants in London then these Raspberry  Meringues will be no stranger to you.  You can't help but notice how the pink, billowy clouds of goodness stand out among all the other baked goods on display.  I distinctly remember being mesmerized by them the first time I visited the Westbourne Grove location many years ago.  Back then I never even bothered trying the meringues; call it a temporary lapse in judgement.  Now, years later, I'd finally gotten around to making a copycat version for myself and I was so pleased with the results.    



It all came about because I was in search of a dessert that was elegant, light and refreshing for a dinner I recently hosted. I had a ton of egg whites sitting in my fridge just waiting to be used and pavlovas immediately popped in to my head.  The meringue dessert topped with fresh whipped cream and berries sounded like just the ticket.


I turned to my friends at Cook's Illustrated and found their recipe for pavlovas.  As I was whipping up the Swiss meringue an image of Ottolenghi's fruity meringues popped in to my head.  Fortuitously I also had a bag of Trader Joe's freeze dried raspberries in my cupboard.   Bingo!  Combine the two and you get a very legitimate replica to the original.
