No-Bake Lime Cheesecake

When the temperature rises even I, as an avid baker, hesitate to turn on the oven.   Call me crazy, but when I was a kid growing up in the sweltering summers of California's San Joaquin Valley I used to bake all the time.  But mind you, I was wearing my bathing suit at the time - it was the only way I could tolerate the crazy hot weather.  These days you definitely won't catch me wearing that particular attire!

So when I was browsing the July/Aug 2017 issue of Martha Stewart Living the recipe for a No-Bake Key Lime Cheesecake immediately jumped out at me.   Even better, I had all the ingredients in my kitchen.  [Note: I used regular organic limes, not key limes.]  Graham cracker crusts are de rigueur for cheesecakes, but the twist with this recipe was it didn't require baking.  Instead you just pop it in the freezer for 15 minutes.  Genius!

The filling is super light, creamy and jam packed with lime flavor.  If you love citrus this cheesecake is right up your alley.  It's the perfect dessert for your next BBQ, but honestly I'd indulge in it for any occasion.

Beijinho & Brigadeiro

The 2016 Summer Olympics conclude today in Rio so here's my final homage to the games and host country.  I had heard of the popular Brazilian candy brigadeiro, a chocolate fudge ball most associated with birthday parties, but when I mentioned I was thinking of making them my Brazilian colleague Marcelo said his favorite sweet was actually the beijinho.  Beijinho?  What the heck was that?  Beijinho in Portuguese means "little kiss" and these treats are similar to brigadeiro but made with coconut instead of chocolate.

Both candies start with a base of sweetened condensed milk and butter.  Chocolate or coconut is stirred in and the entire thing is cooked over the stove.  You stir constantly until the mixture gets very thick and viscous.  Once cooled, the candy is formed in to bite-sized balls and rolled in sprinkles or coconut.

Given my aversion to anything overly sweet I was a bit hesitant about candy made with condensed milk.  To my delight I found both versions had just the right amount of sweetness.  I must say that I agree with Marcelo and prefer the beijinho, but that's mainly because I pretty much love anything coconut.  The one tip I would offer is to cook the candy mixture until it's super thick.  With my brigadeiro I think they definitely could have benefited from a few more minutes on the stove to ensure a harder consistency when cooled.   But no worries, it still tasted delicious!

Tres Leches Cake

Need a delicious cake to celebrate Cinco de Mayo (or any occasion for that matter)?  You've got to try this Tres Leches Cake from Cook's Country.   If you're not familiar with this Mexican dessert it's a sponge cake that is soaked in three types of "milk" (heavy cream, condensed milk and evaporated milk) and frosted with lightly sweetened whipped cream.

I'm not a fan of versions that are completely drenched in milk; so much so they leave a puddle of liquid on your plate.   Rather, I prefer mine to be moist, not mushy.  This recipe gets it right.

I've included the full recipe here which makes a 9x13 inch cake, but for the blog I made half the recipe and baked it in an 8x3 inch round cake pan.   Came out great!

Note: Be sure to use all the milk mixture when you soak the baked cake.  I didn't (had about 1/4 cup of the liquid leftover) and found that I had a few dry pockets in the cake.

NPR Lemon-Lime Pie

An email a while back from my sister, "Heard this lemon pie story on NPR and it sounds delicious and easy."  For those of you who may not be fluent in "big sister", allow me to translate:  "Can you make this pie for me - because I'm lazy and besides, you love to bake anyways." Luckily for her she's right, on both counts.

I was definitely intrigued by the recipe for Atlantic Beach Pie.  The filling is similar to one for key lime pie and requires basically only three ingredients: condensed milk, egg yolks and fresh lemon or lime juice.  The twist is the crust that's made with saltine crackers.  Hmmmm...salty and sweet - definitely promising.

Could a pie this easy to make with so few ingredients be the real deal?  I had my reservations, but when I brought it to a recent family BBQ it was unanimously given the thumbs up.  Almost unheard of from such a large group of self-appointed food critics.

The tart filling wasn't as sweet as I had thought and the salty cracker crust was the perfect counter balance to it.  I think it's an ideal dessert after a heavy meal.   I'll definitely be making it again and again!  Could this be a case of "sister knows best"?  I shudder to think...lol!
