Goldfish Sugar Cookies


My niece's co-worker ordered goldfish sugar cookies for her son's first birthday party this month.  I just love the color theme she chose.  The orange and blue are reminiscent of the colors I use on my blog.    

The inspiration for these cookies came from one of my all-time favorite snacks, Pepperidge Farms Goldfish Crackers.  I think they turned out super cute.  Hopefully the kids don't confuse them for the bite-sized crackers!

 

Basic Vanilla Sugar Cookie 

1 cup unsalted butter, at room temperature
1 cup granulated sugar
1 egg
1 tsp vanilla extract
3 cups all-purpose flour
1 tsp baking powder
1 tsp salt

Preheat oven to 350 degrees.

In a standing mixer with the paddle attachment, beat butter and sugar until light and fluffy.  Add egg and vanilla extract and combine until egg is completely incorporated.  Add flour, baking powder and salt and mix until no trace of dry ingredients remain. 

Roll out dough on a lightly floured surface to about 1/4" thickness and cut out shapes using cookie cutters.

Bake for about 18 minutes or until golden brown.


Royal Icing

4 cups powdered sugar
1/4 cup meringue powder
1/4 cup water
gel food coloring

Mix powdered sugar and meringue powder in bowl of stand mixer until well combined.  Slowly add water and mix until you get the consistency you want*.  Add food coloring to achieve your desired color.

For outlining: consistency should be like glue paste
For flooding: add enough water so that the consistency is pretty runny

    Your cookies are a big hit! My cookie got stolen and eaten by some other co-workers that ended up loving it! They say they want to put in an order with you! You might have to start shipping those cookies instead of driving down here!

  6. I hand cut the dough using a template. I couldn't find a cookie cutter in the Pepperidge Farms goldfish shape.

  7. I just found the cute little goldfish cracker box that they sell...the yellow one that is shaped just like the cracker. (they make them for cheerios too)...I just took the lid off and will use that for my cutter..in fact as soon as I saw it I thought for sure that is what you used!! Thanks for the idea. Making them this week for a party!!
