Hamantaschen


I kid you not, I've been waiting a year to make these hamantaschen, the traditional cookie served during the Jewish holiday of Purim.   Don't laugh but it was actually Costco that introduced me to these delicious treats.  Gotta love the weekend samples! 

Given my inexperience with the triangular shaped cookies I turned to the internet for help.  There were a few recipes online but none that really caught my eye so I ended up improvising by using a simple shortbread recipe and Solo apricot cake and pastry filling.  My interpretation of hamantaschen may not be as authentic as your Bubbe's but for now I think they're pretty darn good!

Hamantaschen

250 grams unsalted butter, room temperature
110 grams powdered sugar
333 grams all-purpose flour
Fruit filling, jam, etc. of your choice
 
Preheat oven to 350 degrees.
 
Cream butter and powdered sugar until light and fluffy.  Add the flour and mix well until it's fully incorporated.  Roll out the dough to 1/8" thickness on a lightly floured surface.  Use a 2-1/2" round cutter to cut out rounds of dough.
 
Place rounds on a parchment lined baking sheet.  Spoon a 1/4 teaspoon of filling in the center of each round and fold the dough over on three sides to form a triangle shape.  
 
Bake in the oven for about 11 minutes or until golden brown.
