Dutch Oven Bread and a Giveaway


I tend to focus most of my baking on sweets: cakes, cookies, cupcakes, ice creams, etc.  Since I don't really eat what I make, I like to give it away, those extra lbs. have fortuitously been kept at bay.   But lately I've been yearning to bake something different.  Something that I don't normally make and would actually want to keep for myself.  Something like....bread!

There's nothing better than a slice of warm, crusty bread with a smear of creamy butter.   So simple, so straightforward, so delicious.  

I'd heard about a bread that requires almost no-kneading and is baked in a Dutch oven.    Mark Bittman was the first to write about it in the New York Times and then Cook's Illustrated came along and made their little tweaks, as they do so well, and improved upon the recipe.

This bread is so easy to make you wouldn't believe it.  It literally takes less than 5 minutes of prep and the rest of the time is spent letting the dough rise and then baking it in the oven.   Be forewarned: the smell of fresh baked bread permeates throughout your house like a drug.   This bread is crusty, chewy and has great texture; all it needs is your favorite topping.

No-Knead Bread (from Cook's Illustrated)

3 cups (15 oz) unbleached all-purpose flour, plus more for kneading
1/4 tsp instant or rapid-rise yeast
1 1/2 tsp table salt
3/4 cup + 2 Tbls water (7 oz) at room temperature
1/4 cup + 2 Tbls mild lager (3 oz) at room temperature
1 Tbls white vinegar

Whisk flour, yeast, and salt in large bowl. Add water, beer, and vinegar. Using rubber spatula, fold mixture, scraping up dry flour from bottom of bowl until shaggy ball forms. Cover bowl with plastic wrap and let sit at room temperature for 8 to 18 hours.

Lay 12- by 18-inch sheet of parchment paper inside 10-inch skillet and spray with nonstick cooking spray. Transfer dough to lightly floured work surface and knead 10 to 15 times. Shape dough into ball by pulling edges into middle. Transfer dough, seam-side down, to parchment-lined skillet and spray surface of dough with nonstick cooking spray. Cover loosely with plastic wrap and let rise at room temperature until dough has doubled in size and does not readily spring back when poked with finger, about 2 hours.

About 30 minutes before baking, adjust oven rack to lowest position, place 6- to 8-quart heavy-bottomed Dutch oven (with lid) on rack, and heat oven to 500 degrees. Lightly flour top of dough and, using razor blade or sharp knife, make one 6-inch-long, 1/2-inch-deep slit along top of dough. Carefully remove pot from oven and remove lid. Pick up dough by lifting parchment overhang and lower into pot (let any excess parchment hang over pot edge). Cover pot and place in oven. Reduce oven temperature to 425 degrees and bake covered for 30 minutes. Remove lid and continue to bake until loaf is deep brown and instant-read thermometer inserted into center registers 210 degrees, 20 to 30 minutes longer. Carefully remove bread from pot; transfer to wire rack and cool to room temperature, about 2 hours.

    my favorite bread is french bread I like to dip it in a mixture of condensed milk, which is just boiling water with a a couple of tablespoons of condensed milk, my dad would make this for me as a special breakfast treat1

    don't you loved the no-knead bread? and you're right, the LC dutch oven does wonders for it.

    so hands down favorite bread is irish soda bread. dense, hearty and perfect warm and slathered with butter. it's like chicken soup or a cup of tea for me!

  42. My favourite is the bread a store in my hometown used to make - it was called "Light Sour Rye," not because it was "light" in the diet sense, but as in the opposite of a dark rye. It was so soft and so good. I used to take a loaf back to college with me when I'd go home for holidays. Unfortunately, it's been a long time since it's been available.

  53. I love no-knead bread. I actually make up a no-knead dough that has no sugar in it and once it rises I divide it into 1/3's and place 2/3 in the fridge for use up to a week and a half later. It is great and super-handy!

    My favorite bread though is from the NORML Bakery in Geneva, NY. It is an organic provolone pepperoni artisan bread that makes the absolute best grilled cheese sandwich I have ever had!

  55. I love making no-knead bread (I use the Cook's Illustrated recipe, too). I'm pretty sure there's some magic going on; how else to explain why it takes so little effort to make something so yummy?

    My favorite boughten bread is the Cyrus Pringle loaf from Red Hen Bakery in Middlesex, Vt. It's made from organic wheat grown in Vermont, and is just perfect lightly toasted, with sweet butter and a sprinkling of salt. You can't beat the basics when they taste so good.

    I have so many favorites! I love a good sourdough for sourdough sausage stuffing. I love a good Italian with a garlicky leek soup dip. And a good bagel with poppyseeds, sesame seeds, garlic and onion served warm and slathered with butter! Who can choose only one?? Not me!! I don't have the equipment for the no knead bread yet but am dying to try it. I love the idea of having it in the fridge and being able to take some out and cook it fresh...YUM

    My favorite bread is something like the italian breadstick they serve at the Olive Garden,it's called feeno.I was born in Egypt and the soft feeno with the pita bread is a staple in the Egyptian breakfast and dinner.I like to eat it as a sandwich stuffed with Egyptian style romano cheese and pieces of Basstirma(fillet mignon cured with garlic and spices,famous in Egypt and Turkey)with a cup of tea.

  100. Sadly (or not!) I love almost all breads, it just depends on the situation. A rustic pumpernickel for sandwiches, a baguette with cheese or herbs & oil. A crusty any kind with some butter & maybe a little honey. And who can forget garlic bread!? Pretty much anything but white sandwich bread will make me a happy girl but I must say that if it's fresh & hot out of the oven, the scent wafting throughout the house makes me melt. I would love to try this recipe with a new LeCruset dutch oven!
